Carrot Cake

2 cups sugar
1 1/2 cups oil
4 eggs
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
3 cups grated carrots
1/2 cup chopped nuts (optional)
 
Frosting:

1/2 stick butter
1 box confectioners sugar
2 teaspoons vanilla
8 ounces cream cheese
 
Mix oil and sugar, then add eggs, one at a time, and mix well.
Add dry ingreds alternately with grated carrots.
 Bake in 9" x 13" pan at 300* for 1 hour.
Done when toothpick in center is dry.  
Cool in pan; frost with cream cheese mixture.
